Today the crazy tradition of the Spanish starts again: La Tomatina, where thousands of people enter the narrow streets of Buñol to get into a giant tomato fight with 160.000 tomatoes. All because a bunch of young rebels where standing next to a greengrocer during a local parade in 1945 and started throwing tomatoes as a joke. Although we don't cheer to all this beautiful food gone wasted, it is kind of funny.
We decided to have our own little tomato feast... for lunch! Superchef Tim created this wonderful dish that's easy for you too to make at home. An ode to the lovely tomato.
To make this dish at home you need the following ingrediënts:
4 to 5 big, juicy and tasteful tomatoes
1 chili pepper
1 red onion
2 cloves of garlic
Teaspoon of cumin seeds
Teaspoon of smoked bell pepper powder
Some fresh cilantro and parsley
3 free range and organic eggs
The best bread in the world
First chop the garlic, onion, chili and spices and fry them shortly in olive oil. Then add the chopped tomatoes. Fry everything thoroughly, add a splash of water and simmer the heat. Cook until you have a nice chunky sauce. Add the herbs and season with salt and pepper.
Break the eggs on top of the sauce and cook them to your liking. Serve directly with some labneh and some freshly baked bread to soak up all the delicious sauce.
