Paz is a rich and full-bodied coffee that comes from our friend Adolfo Vieira Ferreira in Brazil. We visit Adolfo's farm, Fazenda Passeio, every year to select the best lot from the harvest and bring it back to you.
The Paz coffee that results has become our top seller: a beautifully rich and full-bodied coffee, with a smooth and easy-to-drink profile. Expect deep, rich dark chocolate flavor, soft fruity notes, and a full body.
Paz makes a great, lower-toned espresso and combines with milk in a cappuccino to give a flavor almost like hot cocoa. It's also especially versatile in fully automatic machines, and was designed with that style in mind.

Our partnership with Fazenda Passeio spans four years and two continents. We first encountered the outstanding Passeio coffee through our friends at Trabocca Coffee Importers. We were captivated immediately by the deep, rich sweetness of the coffee, with its flavors of milk chocolate and stone fruits.
After deciding this was the perfect coffee to use for our signature espresso, we decided it was time to to Brazil ourselves and visit Fazenda Passeio in person. Nestled in a natural valley surrounded by forest, with a small spring-fed river running through it, Passeio is a breath of fresh, green air in contrast to the mechanized factory-farming that is common in the coffee industry in Brazil.
Adolfo Henrique Vieira Ferreira, the man who runs Passeio, is a fourth-generation coffee farmer. Over the last decades, he has continued the best traditions of his forefathers, while also introducing innovative new changes to improve the social and ecological impact of his farm. All the coffee is picked manually, which is extremely rare in Brazil, where huge mechanized picking machines are the standard. Solar panels in the middle of the farm are used to charge the hand-picking devices that the workers use to harvest the coffee. In addition to being better for the environment, these silent electrical hand-pickers are also a huge improvement over gas-powered picking machines with very loud motors that would disturb the workers and the local wildlife alike.
Hand-picking in this manner is a delicate business, and time-consuming, but Adolfo believes it is best not just for the environment, but for the quality of his coffee. Rather than a machine taking down all the ripe and unripe coffee at the same time, as at conventional farms, workers at Passeio can target trees with ripe cherries only. Ripe cherries means sweeter, more flavorful coffee in your cup.
We first visited Fazenda Passeio in 2021. In 2023, Adolfo visited Amsterdam for the Amsterdam Coffee Festival and it was our pleasure host him at our place. It's a unique honor to serve a farmer his own coffee. For the new crop years in 2024 and 2025, we were able to visit Brazil again, and our relationship with Adolfo and his family continues to grow.

Paz is roasted just a bit on the dark side. Although none of our coffees are roasted super-dark (you will not see black beans with an oily surface as you do with some brands), Paz does go just a hair darker than our other offerings.
What does this mean for the flavor? The acidity is lowered significantly, the body and sweetness are increased, and the aroma is mostly deep and chocolatey.
Paz is especially well-suited for fully automatic “whole bean machines”, such as the Jura.
