Our flagship blend, we proudly serve Ayu in all the espresso drinks at our cafe locations, and we highly recommend it for home espresso! Each component is roasted separately to an exacting profile, then blended in precise proportions to give a deeply sweet and creamy profile, with delicious chocolate and cherry jam notes.

Ayu was the first coffee we ever created when we first started the roastery 5 years ago. The components have changed but the soul of it remains the same. Every coffee we use in Ayu is carefully sourced from farmers we know well.

60% of the blend is Brazil natural coffee from Fazenda Passeio, the same beans that make up the Paz and the Sol. This year, like every year, it's a lot that we selected personally, on the ground in Brazil with the farmer. This coffee is soft, full-bodied, and sweet, with primarily chocolate flavor.

20% of the blend is Colombia washed coffee from Santa Maria in the Huila region, and it's the same coffee we use for the Isa. This coffee is from a project called Los Osos ("The Bears"), so-named because the farmers involved are working to preserve and expand the natural forest habitat of the South American "spectacled bear" native to that region. This coffee is bright, clean and zesty.

20% of the blend is Suke Quto natural process coffee from the forested region of Guji, Ethiopia. We want one component to bring fruitiness to the Ayu, and the Suke Quto comes through with flying colors, adding berry and currant aromas on top of the main chocolatey layer.

Ayu was the first coffee we ever created when we first started the roastery 5 years ago. The components have changed but the soul of it remains the same. Together, the Ayu components are designed to make an espresso that is rich, full-bodied, sweet and easy to drink. The primary flavor note is chocolate, with just enough fruit flavor to lend it some intrigue. It's designed to perform very well with milk in cappuccinos, etc.

Ayu is designed to be easy for you to make repeatably fantastic espresso at home. Some espressos have great flavor *in theory*, but they are so finicky that maybe only one out of ten shots comes out the way you intended, even with lots of care and attention.

When creating Ayu, we had a challenge to overcome. Our flagship cafe at the time would get so busy at times that baristas were serving a hundred drinks an hour, each! They simply could not afford to spend ten minutes fussing over every single set of shots. And yet, we wanted every customer to get a world-class coffee. The solution? A blend that was full in flavor, complex and layered, and yet not overly sensitive to minor variations in extraction. That's the Ayu.

Recipe

The recommended extraction parameters we use ourselves are: 18.5 grams; 70 ml water in, 45 ml espresso out; 26 seconds +/- 2 seconds; 91 degrees. The color should be a rich red-brown, and it should be full-bodied, sweet, and rich. 

However, customers with smaller baskets that cannot fit so much coffee, or with variable temperatures will find they can still get excellent shots. You can still enjoy your coffee at 21 seconds, or 30 seconds. It's perfect for hobby baristas: rich complex flavor and a lot of room to play around with and find your favorite extraction.
