Magic is one of the most intensely fruity and sweet coffees we've ever carried. A common reaction: "I didn't know coffee could taste like this!" The aroma and flavor are like a melange of tropical fruits melded together - fruit cocktail, sugar syrup, white tea.

This comes from the famous Geisha varietal grown at Finca Santa Elena in Pitalito, Colombia. The ripest cherries undergo nine distinct processing stages including initial oxidation, pulping and washing, anaerobic fermentation, thermal shock, and sun-drying. Each stage is carefully controlled to create the unique flavor the farmers call "Magic."

We roast Magic in small batches only on our 1-kilo shop roaster. Available in 1kg, 250g and 100g bags.

Finca Santa Elena is a second-generation family farm in Pitalito, sitting at 1,650 meters above sea level. The family grows coffee across 9 hectares, taking an active role in every stage of production.

They blend innovation with tradition. The processing they use for Magic involves nine carefully controlled stages over several days. Start with the ripest Geisha cherries. Initial oxidation. Pulping and washing. Anaerobic fermentation - sealed environments where specific microbes develop particular flavors. Thermal shock - rapid temperature changes that affect the beans at a cellular level. Finally, sun-drying. Each stage calibrated to build the coffee's unique character.

The farm uses an agroforestry system with native trees, promoting biodiversity and sustainability. For the family, Santa Elena is more than a farm - it's a reflection of hard work, dedication, and love for their land, something they hope to share in every cup.

The first time we cupped Magic, even as coffee professionals, we were blown away. The fruity aroma is over the top - it almost smells like there's something other than coffee in the cup. There isn't, of course. This is just coffee. But that's the experience.For people who've never encountered a coffee like this, it's mind-blowing. "I didn't know coffee could taste like this" is the most common reaction we hear.Magic is the adventurous option in our lineup. People buy it as a gift for their coffee-loving friends. It's intense and unusual, incredibly special and unlike anything else.We recommend brewing Magic as a filter coffee with a ratio between 15:1 and 17:1 (water to coffee by weight). The lighter extraction lets all those tropical fruit flavors shine.

Connection

When we cupped this coffee, it stopped us cold - intensely tropical, clean, incredibly sweet. Then we found out it was Nestor Lasso's work and knew we had to have it. It was almost an indulgence, getting to carry coffee from a producer this prestigious.

The tropical fruit character is remarkable. Pure passion fruit and mango, with sweetness that's off the charts. Our roaster Valeria fell hard for it and gave it its name - parchita is Venezuelan Spanish for passion fruit.

This is coffee from one of the best producers in the business. Brew it as a filter coffee to appreciate those tropical aromatics, or try it as a punchy espresso if you're feeling bold.
